Ajapsandali


Ajapsandali (აჯაფსანდალი) - delicious vegetable dish with eggplant as the main ingredient, often cooked by my family. It unites the tastes of Georgia, Armenia and Azerbaijan. I often associate it with 18th century poet, musician and diplomat Sayat-Nova that lived in Georgia and wrote in Georgian, Armenian, Azerbaijani as well as in Persian. He assisted to forge an alliance between Georgia, Armenia and Shirvan(Azerbaijan) just like they are integrated in this dish.
